I LOVE Indian food and unfortunately, am unable to eat out at Indian restaurants due to the sodium content. My local favorite Indian restaurant (shout out to Desi Spice in midtown Atlanta!), however, makes me large trays of my favorite dishes with no added salt! I then individually portion it and freeze it. One thing I miss though are the crispy papadums that come with the meal. I decided to perfect my own recipe with no salt.

Ingredients
- 2 cups urad flour (white lentil flour; you can find this at an Indian grocery store or on Amazon)
- 1/2 cup water plus more for kneading
- 1 tsp. whole cumin seeds
- olive oil (for kneading)
- freshly ground black pepper to taste
- Mix together the flour and water until the ingredients are just blended. Add water little by little while you are mixing. You will want to end up with a stiff dough.
- Knead the dough for several minutes. It will be sticky but will come together. You can spread oil on your hands to prevent sticking.
- Divide dough into small balls (about the size of a golf ball). Roll them into a thin circular shape, so thin you can almost see thru them. I use parchment paper and a wooden dough roller.
- Sprinkle with whole cumin seeds and black pepper and use the dough roller to gently press the spices into the papadums.
- Allow them to dry out, flipping them occasionally throughout the drying process. You can also dry them quicker in an oven at its lowest temperature.
- The simplest way to now cook them is to pop them in the microwave for about 20-30 seconds. However, they are best deep-fried in a small amount of oil.
