• 1-1/2 cups medium grind cornmeal (I like Bob’s Red Mill)
  • 2 tsp baking powder (Hain’s Pure Food is sodium free)
  • 1 Tbsp sugar (I omit this because I don’t like it sweet)
  • 3 Tbsp olive oil
  • 3/4 cup milk or milk substitute (I use Nutpods Almond / Coconut Creamer)
  • 1 Neat brand egg substitute (no sodium!)
  • Unsalted butter to grease pan
  1. Preheat oven to 350°F.
  2. Use unsalted butter to grease an 8-inch square baking pan or cast iron skillet
  3. Mix all of the dry ingredients together.
  4. Now combine the wet ingredients and add them to the dry.
  5. Blend well and pour into greased pan/skillet.
  6. Bake for 30 minutes.
