- 1-1/2 cups medium grind cornmeal (I like Bob’s Red Mill)
- 2 tsp baking powder (Hain’s Pure Food is sodium free)
- 1 Tbsp sugar (I omit this because I don’t like it sweet)
- 3 Tbsp olive oil
- 3/4 cup milk or milk substitute (I use Nutpods Almond / Coconut Creamer)
- 1 Neat brand egg substitute (no sodium!)
- Unsalted butter to grease pan
- Preheat oven to 350°F.
- Use unsalted butter to grease an 8-inch square baking pan or cast iron skillet
- Mix all of the dry ingredients together.
- Now combine the wet ingredients and add them to the dry.
- Blend well and pour into greased pan/skillet.
- Bake for 30 minutes.
